SHRIMP SCAMPI


This is always a repeat in our household :) 

SHRIMP SCAMPI

INGREDIENTS:

1 lb angel hair pasta
1 cup butter
40 pieces medium sized raw shrimp (no tail)
half medium sized lemon
1/8 cup dry white wine
½ cup curly parsley
salt


DIRECTIONS:

Cook pasta according to package directions (al dente). Using a large sauté pan melt butter over medium to high heat, once butter is melted add the shrimp. Once shrimp is cooked to medium, squeeze lemon, after 30 seconds add wine, switch to medium heat. Let the wine burn off, about 1 to 1 ½ minutes. Once shrimp is cooked to medium well add parsley and salt to taste, switch to low to medium heat, stir. Serve over angel hair pasta.
